Easy recipes are my absolute favorite, and I love when I can create something quick with what’s in my pantry. That’s why I LOVE these super easy Three Cheese Garlic-Herb Drop Biscuits. Drop biscuits are so easy to throw together, typically when I already have dinner going on the stove or in the instant pot. I’ll be thinking, “Hmm, what could I serve this with?” Then, I’ll realize I don’t have any French bread or baguette’s, then comes the “aHa” moment! Drop biscuits!
That’s how this recipe came together. I wanted something really savory and flavorful, it has garlic three ways, three kinds of cheeses, and lots of herbs!! So good, and easily paired with anything.
I made this with some of my favorite flavors from my own pantry, but feel free to customize based on your own spices and seasonings, and – of course – your favorite cheeses.
The key is, keep that butter cold right up until you add it to the mixture, this is what creates those little pockets in your bread!
Mix the cheese in last with the minced garlic, right before the herbs. It doesn’t need to be heavily mixed either, just gently folded in before the herbs are added.
The mixture will be wet, using a tablespoon, “drop” the biscuits onto your baking sheet. This is where drop biscuits get their name! I love to use a silicone baking mat because clean up is so easy, you could also use parchment paper or foil.
Pop in the oven and melt the rest of your butter and add the spices so the biscuits will be ready to brush when they’re almost done.
Brush the seasoned butter on the biscuits, and bake them again for a few more minutes.
Allow a few minutes to cool while you finish up the rest of your dinner.
Serve with all of your favorite recipes! I love making these when I have a meal in the Instant Pot, but these would even be great with your favorite slow cooker or stove top meals. Whether it’s a simple fish and salad meal, or a fancy full course meal. These little biscuits are great with anything, and compliment all flavors so well! Just be careful, they will disappear fast!
