I love potatoes. Any kind, any way, in anything. They're kind of my weakness. This is one of my favorite ways to make them, and thankfully it's pretty easy!I know some folks are trying to hang on to every last bit of summer, that includes barbecue. These potatoes you can compare to steak fries, so instead of buying that frozen package to make with your burgers or hot dogs, try these instead. You'll thank me later. These are great as is, or dipped in ketchup or ranch. You can also top them with ... continue reading...

Mama Harris’ Guacamole Dip
Since I was a little girl I've been obsessed with avocados. I remember my mom would cut open an avocado and split it in half, hand me a spoon and some salt and we would then devour it just like that, right in the kitchen. Nowadays, I put avocado in my BLT's, omelets, breakfast sandwiches, salads, and anything else it remotely sounds good in. I just can't get enough! Another of my very dear favorites snacks would be chips and dip. I'm a total nachos girl, and chips are my absolute favorite ... continue reading...
Perfect Brunch Quiche with Pillsbury Deep Dish Pie Crust
Growing up, I remember my mom making a quiche every so often. From a large quiche to cute little mini ones, and they were always a favorite of mine. We typically had them for dinner, or the little ones could be considered an appetizer. I, however, love to make it for my family for a breakfast or hearty brunch.A quiche is even a great breakfast for either Thanksgiving or Christmas morning. It's also great to have ready for house guests served with a warm cup of coffee. Of course, it doesn't have ... continue reading...

Black Bean Medley Quesadillas
So, I have a confession to make.Lately it's been a little difficult for me to cook up my "normal" meals for my family.I've been a little out of commission with my left arm and it pretty much affects everything. First my doctors diagnosed me with tendinitis, but then after a second opinion I'm now diagnosed with carpal tunnel in both hands, and cubital tunnel in my left arm. I'm in the process of getting tests done to see the severity, and then discussing options. Surgery could be one of them. It ... continue reading...
Roasted Artichokes
It's no secret that one of my favorite ways to make vegetables is to roast them. Roasting brings out so much of the natural flavor in veggies, without boiling away much of the good and healthy nutrients. Sometimes all you need to roast is just a little olive oil or butter or margarine, and some salt and pepper and maybe another spice or two. Just enough to enhance the natural flavors of the veggie you're making.Artichokes are one of my favorites. Fortunately for me, I grew up in California where ... continue reading...
Stir Fried Rice with Veggies
I love making stir fry rice. It's a great way to use up leftovers of veggies and rice and get a delicious dish in. My husband loves to just make a big pot of white rice every so often, and he adds milk and sugar to it and eats it as a little meal, kind of like oatmeal. So when he does that, there's often leftover rice. Stir fry rice actually works best with rice that has been cooked previously, usually 2-3 days before hand. When it's being stir fried it's less likely to get soggy and mushy, ... continue reading...
Slow Cooker Saucy Sticky Drumsticks

Chili, roasts, even Thanksgiving Stuffing...ALL IN THE SLOW COOKER! Something about it, things just taste better when cooked in the slow cooker. It gives it all a chance for the flavors to dance and meld with one another and give that wonderful flavor. Delicious!I've played with this recipe quite a bit. One night about a year ago I ... continue reading...
Garlic Parmesan Asparagus
Who doesn't love asparagus? It's one of those vegetables that you don't have to do much with. It has a wonderful flavor, and not to mention asparagus spears are gorgeous! It's pretty and tasty enough that you can serve at a formal dining event and will be pleasing to the eye as well as the palate served with a filet mignon or a honey glazed ham, but it's diverse enough to be served with a traditional dinner at home as a side to chicken or steak.I simply love it! Garlic and Parmesan also go hand ... continue reading...
Sinfully Delicious Stuffed French Toast
We love French Toast in our house. This has definintely become the breakfast my daughter has taken over and become a little pro at, she adores making French Toast.I think French Toast is one of the first things I ever learned how to make. I remember when I was about 4 or 5 years old, I went to this preschool that was an actual daycare center, but it was a house turned into a center. Miss Joyce was the owner and she was very hands on. She made all the breakfasts, lunches and snacks right there in ... continue reading...

Banana Nut Bread made with Greek Yogurt
I love making muffins. I make a variety of different flavors, many of which I'll eventually post here. One of my families favorites next to pumpkin muffins is my banana chocolate chip muffins. They love them and just gobble them down. Well last week I was in the mood for a loaf of banana nut bread, but I based it on my muffin recipe. It was a hit! What I've discovered is when your bananas get a little brown and all the sugar comes to the surface, that's the best bananas to use in baking and ... continue reading...
Plum Torte
We have a few plum trees that grow in our backyard, and it has been in full bloom with a ton of sweet fruit. My daughter is my little gardener, she loves to prune the roses and pick all the fruit. So she went out and picked me so many plums I didn't know what to do with! It seems we're growing a few different kinds, some deeper purple and some more golden inside. I decided to see what I could make with these, as there's only so many times we'll eat them raw.I've been under some stress lately, ... continue reading...

Skillet fried corn with a kick!
I'm always trying to find new ways to make veggies. I love a good salad, but that can tend to get boring. I started experimenting with different combinations, and various ingredients I had on hand. I created this recipe for skillet fried corn awhile back while trying to come up with something new. I had a can of corn in my pantry and some random veggies in the fridge. So I played around and this was the end result. It is a little spicy, so if you have little ones you may want to offer them an ... continue reading...
Baked Brown Rice
I LOVE brown rice. I think it's delicious, but prior to finding this recipe I pretty much could never get it right. Most of the time when I made it, it was far too crunchy, even when I doubled the cooking time. Until I found this recipe, that is! I pretty much copied this recipe step by step, and it's absolutely delicious. I don't think I'll ever make brown rice differently!! Alton Brown's Baked Brown Rice Ingredients: 1 and 1/2 cups short or medium grain brown rice 2 and 1/2 cups ... continue reading...
Baked tilapia and veggie foil packets
So even though I typically buy the "same old stuff" when I purchase groceries, I'm always trying to find and think up new ways to make them so it's not always boring. One of my favorite foods to cook with is tilapia. There are so many different ways to make it! Sautéed, baked, roasted, fried...I have dozens of favorite ways to prepare it. But a few weeks back I discovered a new way, it was quick, easy, fun and my daughter enjoyed helping. Every member of my family loved it, from the baby to the ... continue reading...
Mama Harris’ infamous 7-Up cake!!
I love baking, and I love buying new baking "toys". Shortly after I purchased my bundt pan I was very excited to make new sweets and try new recipes. I have quite a few recipes under my belt that my family loves, but this cake takes the top spot. Especially with my husband, so that's a plus! Even my mother in law loves this, and she's not especially partial to cakes at all. This is a fairly easy recipe, and the wonderful thing about bundt cakes is you can slice them thin like bread, or thick ... continue reading...
Crockpot "refried" beans
Sometime last year I stumbled upon this recipe for crockpot beans. I am obsessed with my crockpot, something about the crockpot makes everything taste better. The flavors meld together so well, it's fabulous for stews, soups, chili, many types of roasts, I even do BBQ chicken drumsticks in the crockpot. I ADORE my crockpot, it's a busy mom's best friend. This recipe for crockpot beans is literally SO easy. It will also have your house smelling so delicious after about 4 or 5 hours. The first ... continue reading...
