Shiitake Mushroom Noodle Soup

Shiitake Mushroom Noodle Soup

We've already come to the last week of our #MushroomMakeover with MushroomInfo.com (AD) and Mamavation. The past few weeks have just flown by and since the start of this program I've noticed many differences in how I feel. Of course, I'd love to be happy with what I see in the mirror, but more importantly feeling good was a goal I had. I haven't felt physically well in so long, I forgot what it felt like. For so long I had no energy, was bogged down with constant headaches and body aches, and ... continue reading...

Mushroom, Egg & Kale Breakfast Muffins PLUS Week 3 of the #MushroomMakeover AD

mushroom, egg & kale breakfast muffin

Since I began the #MushroomMakeover with MushroomInfo.com (AD) and Mamavation, I've felt so much better physically. I'm not sure if it's because I've made sure to eat on a schedule, planned meals ahead of time, or made sure my my meals were full of nourishment and everything my body needs. I've also eaten MORE than usual, and way more often! Because of this my body isn't confused anymore by going from famished to full and back again. I've trained myself to eat steadily throughout the day, and ... continue reading...

#DisneySide Mickey Mouse Party

Disclaimer: I received free products in order to host the Disney Side @Home Celebration. The opinions expressed here are my own. The past few months have been pretty hectic in the Harris household. Somewhere among the chaos, we had a few birthdays to celebrate. My oldest turned 19 in the beginning of January, and then D-Man turned 5 at the end of that month, and RoRo turns 4 next week. A few weeks later RiRi turns 14 too, and then right after that is Big G's birthday and then mine. It's ... continue reading...

All thoughts and opinions are my own. How do you come up with you creative recipes? For me, I get inspired by an ingredient and start thinking of the things I can pair it with to bring out a unique flavor profile. For instance, when I created my Apple-Pear Shortbread Bars I wanted a flavor distinctly Autumn inspired. Apple and ... continue reading...

Mushroom & Kale Omelet

Week two has come to a close with my #MushroomMakeover with MushroomInfo.com (AD) and Mamavation and I haven't felt better in years! My food has been delicious, I no longer have headaches and random body aches and pains, and I'm even moving around easier (that is, when I'm not sore from my workouts!). The Mushroom Makeover is all about incorporating mushrooms into delicious meals by replacing some or all of your meats, as well as eating whole grain and fiber rich foods that are rich in protein ... continue reading...

Recently it was announced that I was one of fifteen bloggers chosen for an ambassadorship sponsored by MushroomInfo.com (AD) called the Mamavation #MushroomMakeover Challenge, and this honestly couldn't have come at a better time. I've been beyond frustrated with my weight, and have been in constant discomfort every day. This was just the push I needed to make some much needed changes to my lifestyle! Healthy Chicken Enchilada Bowl

Recently I've made a commitment to eat healthier. I want to look and feel better once the Spring and Summer seasons are here, and that all starts in the kitchen. You know I'm a sucker for delicious food, so I've decided to switch out ingredients in some of my recipes in favor for other ingredients that are better for me. Tyson Foods has a "Just Add This" program that is easily in line with the food changes I've made. It's so easy to add a better-for-you ingredient like Tyson® Grilled & ... continue reading...

Two years ago a case gained national attention. A 17 year old young man, Trayvon Martin, was walking to his father's house from the convenience store in the rain was shot and killed. This case gained national attention and evoked many emotions. With the help of social media, many joined the conversation. Giving opinions as well as seeing many opinions of peers. I witnessed many heated debates, and read many opinions that left a bad taste in my mouth. Recently, another case has been in the ... continue reading...

Egg White Breakfast Sandwich

A few months ago I shared with you this wonderful little breakfast sandwich maker I received from Hamilton Beach as well as a delicious breakfast sandwich recipe. This little machine has become a staple in my kitchen, creating quick and easy breakfast that can be customized in so many different ways. This past weekend I made an egg white breakfast sandwich and shared it on my Instagram. It seemed pretty popular so I thought I'd share. This is a slight variation from my original recipe, but this ... continue reading...

Coconut Cherry Kiss Cookies

If you know me, you know that I love to bake cookies. Since it's been a while since I made some, I was brainstorming what I could make with this bag of cherry chips I'd bought before Valentine's Day. Originally I'd planned on using them for a Valentine's Day recipe, but as usual life got in the way and we've been pressed for time with our move and unpacking. I was lucky enough to get one Valentine's Day recipe cranked out, but this left me with some delicious baking chips and nothing to make ... continue reading...

Breakfast Egg Rolls

Breakfast Egg Rolls

A few weeks back (before our move) I had experimented with egg rolls. The first day I made a more traditional egg roll, consisting of pork, cabbage and carrots. While the filling was great, my folding technique was only sub-par. Unfortunately, this led to heavy egg rolls that tasted a bit greasy. The next morning I decided to try it again, but I'd used up all of my traditional egg roll filling. I still had a bunch of egg roll wrappers, so I decided to make a scramble and use that as the ... continue reading...

I've had this idea for months, although it changes to suit the occasion. I think originally I'd planned to do it for a birthday party, and then for the holidays, now for Valentine's Day. Of course, it can be personalized for a variety of holidays with a simple color change and shape. However, I'm very happy that I did it for Valentine's Day and I'm so pleased with the results. Keeping the Tradition Going with Hallmark #ValentineCards

I was taught at a very young age the importance of a good greeting card. My dad had a certain knack for always picking the best cards that would bring a tear to your eye. I remember always being amazed at how his cards were perfectly suited for each person. Every holiday, birthday and special occasion I knew I could always expect a heartfelt greeting card, and sometimes he would even purchase one "just because". Of course, those were always the best. Through the years I've followed in my dads ... continue reading...

[Sponsored]: Summertime is coming and will be here before we know it! You all know that I love easy meals during the warmer months, and I also love a good meal in a bowl. It’s also Vidalia Onion season 🧅 so I paired this seasonal favorite with pan-seared shrimp and veggies as a light rice bowl using your choice of grains.☺️This meal is an absolute delight!

#OnlyVidalia Get the recipe and all the Vidalia Onion details by clicking the link in my profile @mamaharriskitchen. Also make sure to grab some @vidaliaonions1 from your local grocer before they are out of season in late August/early September.☀️

(AD) There has been a lot of cooking going on this year, so I’ve tried to make life a bit easier by getting creative with my leftovers. These pulled pork totchos are a great example of leftovers with a few key ingredients to create something new to keep our meals exciting. Adding a few key ingredients like @lamorenausa adobo peppers and jalapeños and carrots definitely livens up something simple. La Morena peppers are hand selected, using only the highest quality peppers to bring you authentic home style flavors of Mexico. I purchased my La Morena items from my local Safeway, but you can find them at your favorite grocery store in the international food section. #PayItForwardwithLM #VivaLaMorena #WeCanWithLaMorena

INGREDIENTS:
- 32 oz tater tots
- 2 cups shredded cheese (Mexican blend + Pepper Jack)
- 2 cups prepared bbq pulled pork (check my pulled pork sliders recipe!)
- 1/2 can La Morena Adobo Peppers & Sauce
- 2 tablespoons sour cream
- 2 tablespoons ranch dressing
- 1 cup pico de Gallo
- 1/2 cup guacamole
- 3 chopped green onions
- 3-4 La Morena jalapeños and carrots, sliced

INSTRUCTIONS:
Prepare tater tots as instructed, in air fryer or oven. Heat oven to 450°.
Cover the bottom of a large cast iron skillet with the cooked tater tots.
Top with 1 1/2 cup of cheese.
Combine the chopped adobo peppers and sauce with the prepared bbq pulled pork. Spread the pulled pork mixture on top of the tater tots, then top with the remaining cheese.
Bake in the preheated oven for 5 minutes.
Top with sour cream, ranch, pico de Gallo, guacamole, green onions, and sliced jalapeños and carrots.

Enjoy!! 😋

Happy December, all!! 🎄Since it’s basically Christmas now, it’s time to share ALL the holiday cookies!

Every year I join my friend @natashanicholes as she heads up her #HousefulofCookies virtual cookie swap, where many of us share some sweet treats for the holiday season.

This year I’ve created Cranberry Pistachio Citrus Cookies to share as my contribution. 🍪 I know that a lot of things have turned “virtual” throughout this year, but a little virtual bake-off is a fun way to connect with some of your favorite people!

Hello Instagram fam! 💖 There’s some new faces around here and it’s been a while since I showed mine!

I’m Dawn, creator of Mama Harris’ Kitchen, and I’m so glad you’re here with me! In this space I share my family-friendly recipes for all occasions, whether it be a 30-minute meal for those busy weeknight dinners or a full spread for entertaining a crowd - and everything in between.

Mama Harris’ Kitchen began back in 2012, in fact it’s 8 years this month! 🥳 What started as a way to document my newfound cooking hobby while managing my “new” life as a stay-at-home wife and mom to a 1 and 3 year along with teens and preteens, and it quickly grew into what it is now - a recipe resource for busy families like mine that enjoy flavorful and comforting home-cooking using pantry staples along with fresh and local ingredients as often as possible.

🍿Five fun facts about me:
1. I LOVE elephants! 🐘 I collect a lot of elephant items, whether it’s trinkets or artwork, notepads etc. I love what elephants symbolize and I truly love anything elephant related.
2. I’m a total plant lady! 🌱 I have about 35 houseplants, give or take, and there’s still more on the list of wants. Plants have become such a peaceful outlet for me, and I feel that they really center me within my space. I love the element plants bring to your space and the feel of your home with them in it, and new leaves are so exciting!
3. I have seven tattoos and I have plans for about eight more. 💉 Those that know me aren’t surprised, but those that follow me here tend to find it a bit surprising. 🙃
4. I’ve been a mother for a long time, over half my life! I’ve also been a lot of different “types” of mom - teen mom, single mom, working mom, stepmom, stay at home mom, PROUD mom, military mom, mother in law - the list goes on. No matter what, motherhood looks different for everyone and there’s unique challenges and experiences each mother faces. Please be gentle with yourself! ❤️At the end of the day we’re all just trying our best!
5. I’m a bit of an introvert, and often struggle with the “social” aspect of social media. I tend to go silent sometimes, but I’m working on it.

☀️Thank you for joining me here!
