A few months ago I shared with you this wonderful little breakfast sandwich maker I received from Hamilton Beach as well as a delicious breakfast sandwich recipe. This little machine has become a staple in my kitchen, creating quick and easy breakfast that can be customized in so many different ways. This past weekend I made an egg white breakfast sandwich and shared it on my Instagram. It seemed pretty popular so I thought I’d share. This is a slight variation from my original recipe, but this one uses egg whites in the breakfast sandwich and has avocado as a welcome addition.
If you don’t have a breakfast sandwich maker, you can also cook the egg separately and you could also use a variety of different breads. I often fry the egg in a little pan and then put it all together to create a breakfast grilled cheese like I did here. You can also use turkey bacon, low-fat cheese, and a variety of other healthier options for this sandwich to really make it your own.
Ingredients:
- 1 English muffin, split (you can use whole grain or even sourdough)
- 1-2 slices of cooked bacon
- 2 egg whites
- salt and pepper, to taste
- 1-2 tablespoons chopped spinach
- 2 slices Pepper Jack cheese
- 4-5 slices avocado
Directions*:
If you are using the same sandwich maker that I am, start by placing the bottom of the English muffin in the first compartment after first spraying with a nonstick cooking spray.
Break the bacon in half and layer it on top.
Close and secure the second compartment and separate the eggs, only adding the whites to the machine.
Season as desired with the salt and pepper.
Top with the cheese. I added a bit too much.
Then add the avocado. I also added too much.
Finish with the top half of the English muffin.

*If you don’t have a breakfast sandwich maker, you can easily replicate this recipe. Toast your English muffin, precook your bacon and cook your egg in a small egg pan. Once the egg is cooked, melt the cheese on top and then build your sandwich.
