Spinach, Ham & Pepper Jack Cheese Breakfast Sandwich – plus a GIVEAWAY!

I’ve told you time, and time again just how much I adore breakfast. Every day I have to have some sort of breakfast food before I can go about my day. Even if I wake up and have my morning coffee, send the kids off to school, start cleaning and hours later realize I haven’t eaten. I still have to have breakfast before I have that leftover pizza, since by then it’s lunchtime. Is that weird? We often have breakfast for dinner too, because I just love it that much! My kids, however, are more concerned with other things during the school week. Like waking up on time and cramming all their homework in their back.. oh, and don’t let me forget about my daughter and her hair. Since our house is so hectic as it is (you do realize there’s five children here… need I say more?) I’m always trying to figure out quick things they can grab and go. I love making muffins or buying those breakfast bars, but all of that has so much sugar and they need nutrition. Well, all of that changed!

Do you remember a few months ago I went to Austin, for the BlogHer Food Conference? I had such a fantastic time, made many new friends and met some pretty awesome companies. While I was there, I also won a Breakfast Sandwich Maker from the Hamilton Beach booth! I felt like I hit jackpot, my kids and hubby all love those fast food breakfast sandwiches, but I’m not a fan of buying them when it’s so easy to make at home. Now it just got easier! Maybe even a little more fun!

When my sandwich maker arrived I couldn’t wait to use it. My family started their lists of ingredients they wanted for their own special customized sandwich and we were instantly hooked! It’s so fun to create a variety of sandwiches, and even if you’re not especially imaginative Hamilton Beach has their own list of special recipes as well! The cleanup is super easy too, the middle plates come out completely, so you can clean them and soak them as needed, and you just wipe the outer plates clean! No messy pans to scrub stuck eggs out of!

There’s such a variety on how you can make your sandwiches, and since it’s so easy and fun to use I don’t mind being my family’s own personal short order cook. Just wrap them up with some foil or parchment paper and they’re ready to eat on the go! Perfect for those hectic mornings! Yes, this handy little machine has solved my breakfast dilemma, and now you have a chance to win your very own! I made a tasty sandwich to share here, with just a few ingredients I had in the kitchen. We’ve made such a variety of different flavors and they’re all so delicious. This particular one is everyone’s favorite.

Spinach, Ham and Pepper Jack Cheese Breakfast Sandwich Ingredients:

  • 1 English muffin, split in the middle
  • 1 tablespoon butter or margarine
  • 2 slices deli style smoked ham
  • 3 baby spinach leaves, shredded
  • 1 large egg
  • 1 tablespoon pepper jack cheese
Directions:

Lightly spray the heated plates of the sandwich maker with non-stick cooking spray.
Plug in and let heat up for 5 minutes (The green “ready” light will light up once it’s warmed. This light will continue to go on and off during use, it isn’t an indicator of the sandwich being done or not.)
Spread you margarine or butter on the inside of each slice of English muffin.
Lift the lid and the top plate of the sandwich maker, and place the bottom half of English muffin inside lower ring. Top with ham and shredded spinach.
Lower the top plate, making sure the swinging plate is secured closed, and break the egg inside. Using a fork or knife, break the yolk, then top with cheese.
Once egg has become slightly firm, top with other half of English muffin, then close the lid.
Let cook for a few minutes, lift upper lid and pull out the swivel plate to drop the top half of sandwich onto the lower half. 
Lift the lower ring and carefully lift sandwich out with a spatula (it’s HOT!).
Enjoy!

    I love spinach and eggs together … I think I’d probably go a little crazy with McMuffin-esgue sandwiches in every crazy combo I could dream up 🙂

    I love using bagels for my breakfast sandwiches. Toasted bagel with a fried egg, ham, cheese and bacon. Delicious!!

    I’m a breakfast person all the way. I can eat it three times a day and be completely satisfied. I’m EXTREMELY happy about this giveaway for two reasons.. One, I have no idea this existed and Two, it’s freaking awesome!!!

    I prefer biscuits or english muffins for a breakfast sandwich. I suppose pancakes would be good to, but I think it would be too flimsy.

    This would be so perfect for me! As a college student, I never really have a lot of time in the morning to make breakfast. With this bad boy, I could make a delicious hot breakfast without having to worry about cleaning up a big mess.
