This is a favorite in our house for our simple dinner nights. I love roasting potatoes, or making homemade fries, but I like changing it up a bit with these red potatoes and cheese.
I make these every few weeks and everyone in my house can never get enough of them. I always feel like I hit jackpot when I make something that pleases everyone’s taste buds. I love complicated savory recipes with lots of flavor and even some spice and heat. My husband is the same, but he doesn’t like things too salty. Each of the kids have their own preferences too, sometimes I’ll love something and they don’t because there’s too much savory spices. Sometimes I hate something if it’s too bland, but the kids will love it.
So when I find something that pleases us all I hang onto it!!
These potatoes are no exception, they’re roasted for flavor, seasoned up and cheesy. Everyone loves cheese!! But I use part skim Mozzarella so it’s friendly to my waistline too! Hope you enjoy it as much as we do!!
I found the “skeleton recipe” for this on Pinterest, but was unable to locate the blog to credit. I did change it up a bit, using ingredients I had on hand instead of what the original recipe called for. If anyone knows the proper blog that had the original recipe please let me know so I can credit it accordingly. Thanks!
Ingredients:
- 6-8 medium red potatoes
- 3 cloves of garlic, minced
- package of dry ranch dressing mix
- 1 small onion, chopped
- zesty italian salad dressing
- extra virgin olive oil
- salt and pepper
- shredded mozzarella cheese
Rinse your potatoes thoroughly and cut into cubes |
Place cubed potatoes in bowl with garlic, onion, and dry ranch mix |
drizzle with Zesty Italian salad dressing and olive oil |
stir well and season with salt and pepper to taste |
Spread onto a cookie sheet lined with foil, drizzle areas that look a little dry with some additional olive oil. |
Bake in a preheated oven set to 400 Degrees for about 45 minutes or until potatoes are tender. |
Sprinkle liberally with cheese and serve!! |
