I’m always trying to find new ways to make veggies. I love a good salad, but that can tend to get boring. I started experimenting with different combinations, and various ingredients I had on hand. I created this recipe for skillet fried corn awhile back while trying to come up with something new. I had a can of corn in my pantry and some random veggies in the fridge. So I played around and this was the end result. It is a little spicy, so if you have little ones you may want to offer them an alternate veggie! My husband and older kids love this, but the little ones get something else when I make this!
Ingredients:
- 1 tablespoon butter or margarine
- 1/2 onion, chopped
- 1 medium green bell pepper
- 1 red chili pepper
- 1 can corn, drained (15 oz. can)
- 1 and 1/2 teaspoon garlic salt
- 2 teaspoons oregano
- 1 teaspoon ground pepper
Melt butter or margarine in skillet.
Add chopped onion, bell pepper, and chili. Cook in melted butter until soft, stirring occasionally.
Add drained corn, mix with cooked veggies.
Add garlic salt, oregano and ground pepper.
Stir together, and continue to stir occasionally until corn starts to get a nice brown color.
Serve and enjoy!!
