There are two big things that remind me of food and the whole kitchen experience as a child. Those two things are casseroles and Shedd's Spread Country Crock! Both of my parents worked a lot when I was growing up, so one thing my mom loved to make was a good casserole. As a busy parent, nothing compares to a one dish meal that you can prep ahead of time and pop in the oven for twenty minutes or so once you get home and Voila! Dinner is done!Another staple in my family's kitchen was always ... continue reading...

Satisfy Your Sweet Tooth with Werther’s Sugar Free Candy!
The past few weeks I've been making an effort to make healthier eating choices. Big G and I have our birthdays coming up in just a few weeks (yes, our birthdays are just three days apart) and it's a reminder that we aren't getting any younger. We've also had our fair share of kids birthdays recently, and with that comes cake, ice cream, cupcakes and a slew of far too many sugary treats. This time of year is when I'm over it and on the lookout for new ways to eat better. My husband has an ... continue reading...
Think Outside the Blog – Weekly Blog Hop – Week 25!
Welcome to week 25 of our weekly Thursday Blog Hop, Think Outside the Blog. Wow! 25 weeks ago we began the Think Outside the Blog Hop!When my friends and I decided to do this, we weren't sure what to expect. We were hoping that it would catch on and other bloggers like ourselves were looking for something because maybe we didn't quite fit into the mold of the "typical blogger".Throughout that time we've met some pretty awesome bloggers! We've had some amazing co-hosts as well as had various ... continue reading...
Sweet and Zesty Mango Salsa
I just want to thank you all for your kind words on my last post. I've received emails and comments with nothing but love, support and well wishes. Thank you. Now, I'm finally well enough to get in the kitchen and cook for my family, although most of the time I have to make separate meals because I still can only have soft foods. (Wahhhhhhh!!) I also have a few posts I'm working on developing recipes with some great companies. For one of these great recipes I came up with this mango salsa. ... continue reading...

Entering into the teen years..
It's been quite a week for us in the Harris home, but I was able to make it home in time for a very special day. Today my only daughter becomes a teenager! RiRi is my firecracker, she's my artist and musician, every bone in her body is a creative one. She's always making things and creating projects, and she's so sweet always doing for others. With her love of life and constant smile and laughter, life is always fun when she's around and ever since the day she arrived into our lives they were ... continue reading...
Think Outside the Blog – Weekly Blog Hop – Week 23!
Welcome to week 23 of our weekly Thursday Blog Hop, Think Outside the Blog. I want to thank each and every one of you that comes and joins us again for our weekly blog hop. When these wonderful ladies and I decided to start a blog hop that was just a bit different from your normal blog hop, we were so excited about the various blogs we might discover. It wasn't necessarily a blog hop that we wanted to get huge and have 300-400 people join. We knew it wasn't for everyone, but were excited to see ... continue reading...
Marble Cake with Caramel Frosting
Last Thursday was RoRo's second birthday, and even though he's just a little guy I wanted to make the day special for him. I decided we would make all his favorite foods for his big day. That included waffles and scrambled eggs served with sausage on the side for breakfast, grilled cheese sandwich and strawberries on the side for lunch, deviled eggs to snack on, and spaghetti for dinner.I had thought about what to make him for his cake or celebration, and I browsed the baking aisle for cakes and ... continue reading...
"Rotisserie Style" Baked Chicken
I love a good Rotisserie chicken, but since I don't have rotisserie tools I typically just pick one up at my local grocery store when we are in the mood for one or need a quick dinner. This past weekend I made a chicken stew that called for shredded chicken from a rotisserie chicken. Now, of course I knew I could use any shredded chicken, but I wanted to try to make a rotisserie one. I searched the internets for a copycat rotisserie recipe that called for ingredients I had at home, since last ... continue reading...
Friday Letters – April 5, 2013
Dear Readers,Today is a special edition of Friday Letters for me, so pardon the mushiness you will see here.. it's for a good reason, much to do with why you are even able to read my blog in the first place! Special, because it will include photos! :)Dear Big G,As I've gotten older, the things that I hold closest to my heart are also some of the things that I keep the most private. I rarely go on and on about what a wonderful husband I have and how much I love him. To me, that's very private ... continue reading...
Two Years Already!
Today, my youngest child is two years old!Seriously, where does the time go? When I met my husband, I was a single mom of 2 kids. I didn't even want more children! I was happy with my boy and my girl, we were both single parents and our kids all got along great. What more could we want?A few years into our relationship, we decided to set a date for our wedding. We knew early on that we would marry each other. We always talked about it and planned it. Very soon after we got married we discovered ... continue reading...

Easy Classic Potato Salad
We had a very relaxed Easter. RoRo has been teething something fierce, so our nights have been pretty long. We got a late start Easter morning, since we were up so late the night before.A few days prior I had eaten three lemonheads in a row, and have been suffering from a painful raw mouth, which seemed to have ignited some tooth pain as well. I've been pretty medicated, and RoRo and I have been sharing the same tube of Orajel. Fun times, my friends! So we kept it pretty low key for Easter. We ... continue reading...

Dear Older Kids,Today is the first day of Spring Break!! I'm so happy you guys will be out of school for the next 10 days! I know there's some moms out there that love getting that break from their kids and sending them off to school, but I live for the days and weeks when it's Christmas Break, Spring Break, and Summer Break. I love having my whole family with me, and doing projects around the house, making treats for all my babies, and getting to do fun things both in and out of the house. Of ... continue reading...
Classic Deviled Eggs
It's almost Easter! Seriously, how did that happen? Well, considering it's a bit earlier this year, it's no surprise it seemed to come so quickly! One of the usual traditions we have is dying Easter eggs. I'm excited, because this year RoRo is almost 2, so he can do a little dipping and coloring too!Since we have such a large family, and we like to let all the kids have creative reign over their own eggs, that leaves us with A LOT of hard-boiled eggs. We eat them in our salads, love them with ... continue reading...

Quick and Healthy Chicken Pita Pockets with Strawberry Corn Salsa and Tyson® Foods "Countdown to a Better You" Program!
Yesterday I spoke with you about how my eating habits tend to change a bit once the warmer weather starts rolling around. I mentioned how last summer I had been on a healthy eating journey and lost quite a bit of weight. Unfortunately I had a few hiccups in the process, including a mysterious arm injury that left me with very minimal movement for months. Then the weather got colder and I started craving more comfort foods that wouldn't be considered low calorie. Recently, I stepped back on the ... continue reading...
Roasted Garlic Hummus and Homemade Seasoned Pita Chips
Do your eating habits change with the arrival of the warmer seasons? I know mine do.Once October rolls around, I'm all about the comfort foods with creamy sauces, or the homemade muffins and breads. These are my favorite kinds of foods until February or March roll around, and then I'm loving salads and the more healthy stuff.Of course, I'm a sucker for a creamy sauce year round, but after about 6 months of winter comfort foods my body craves the good-for-you lighter-fare type of foods. These are ... continue reading...

Dear Nasty Cough and Fever,Please leave D-Man and RoRo alone, you're not welcome to my boys!Dear Springtime Allergies,You are not welcome either, kindly go away please (yeah right!).Dear Time,Please slow down. There already isn't enough hours in the day, but I'm not prepared for the final countdown for Boobie graduating, RiRi turning 13, and RoRo turning 2. :(Dear Blog,I am so grateful for the doors you have opened, the friendships I've created, and the opportunities you have provided.
