Now, I’m finally well enough to get in the kitchen and cook for my family, although most of the time I have to make separate meals because I still can only have soft foods. (Wahhhhhhh!!)
I also have a few posts I’m working on developing recipes with some great companies. For one of these great recipes I came up with this mango salsa. In the Spring and Summer I love tacos and salads and wraps with lots of colorful fruits and vegetables, and nothing compliments that more than a homemade salsa. You might remember I made another fruity salsa not too long ago, but instead of strawberries, this one has mangoes. Yum!
I’ve seen a variety of recipes for mango salsa and just like everything else, everyone makes it just a little differently. For me though, I love the sweetness of the mango contrasting with the spiciness of a jalapeno and the lime and cilantro give it a little zing. I chose an orange bell pepper since it tends to be just a bit sweeter than red or green. This salsa is great with chips or crackers, but also great over fish or chicken, in a wrap, over a salad… the possibilities are endless!
- 1 ripe mango, skinned and diced
- 1/2 medium red onion, chopped
- 1 medium jalapeno, minced (seeds removed)
- 1/4 large cucumber, peeled and chopped (seeds removed)
- 1/3 medium orange bell pepper, chopped
- 1/4 cup cilantro, roughly chopped
- juice of 3 small limes (about 1/4 cup)
- salt and pepper to taste
|Dice the mango and combine with the chopped onion and jalapeno.|
|Add in the cucumber being sure to remove all the seeds.|
|Mix in the bell pepper and cilantro.|
|Add the lime, salt and pepper and mix it all together until well combined.|
|Refrigerate until ready to serve.|
