When I first started this blog two and a half years ago I very rarely had any “me-time”. I was a full time stay at home mom, with a three year old and a one year old that took up so much of my time. I honestly don’t know how I managed during that time, from what I recall I don’t think I ever slept.
Now that life has calmed down a bit, the kids are older, the littlest ones are in school and I can actually plan my days and have a schedule, I try to pencil in some time for myself. Growing up as an only child, I’m really not used to all the noise and activity that a big family comes with. Sometimes I just need to decompress and have some time alone. This helps calm my spirit and make me feel more balanced and in tune with my thoughts, goals and plans.
You might be asking me why I need to schedule time for myself if my kids are all in school. Well, that’s easy. I’m often doing a million things at once, writing recipe ideas, editing photos, sharing my recipes here and scheduling all my social media. Let’s not even talk about my email. I often get lost in the rabbit hole and forget to take care of myself. I’ll just work, work, work until it’s time to get the kids.
I remember when I was first introduced to Müller® Yogurt. I was so impressed with the delicious flavor varieties available and it quickly became our families new favorite yogurt brand. So when I saw that there was a new line, the Müller® Ice Cream Inspired Yogurt, I just had to pick up a few containers. This line includes Mint Chocolate Chip, Vanilla Bean and Raspberry Chocolate Chip. I immediately had some ideas on how I could incorporate these delicious flavors into some fun little treats for me… and my family, of course.
One of my favorite flavor combinations is raspberry with chocolate, so the Raspberry Chocolate Chip flavored Müller® Ice Cream Inspired Yogurt was the first one I cracked open. I had a vision of filling raspberries with this delightful flavor, then dipping them in chocolate. This can be snacked on at your own leisure, then refrigerate the leftovers. You can also serve these little chocolate covered, yogurt filled raspberries over a variety of desserts.
For now, though, I’ll just keep it light. I actually had a few served over the Vanilla Bean flavored Müller® Ice Cream Inspired Yogurt and loved the little flecks of vanilla bean. Regardless of which flavor you choose, the yogurt is thick and creamy, reminiscent of actual ice cream. When I’m trying to eat a bit healthier, yogurt is always my go-to snack and this yogurt has all the taste of a sinful dessert in a better-for-you choice.
Yogurt Filled Chocolate Covered Raspberries Ingredients:
- 2 pints of raspberries
- 1 container of Raspberry Chocolate Chip Müller® Ice Cream Inspired Yogurt
- 8 ounces Semi Sweet Baking Chocolate
Equipment Needed
- Pastry bag with a tip or a sandwich bag with the corner cut off
- wax paper
- double boiler or chocolate fondue dish
Directions:
Wash all the raspberries and pat dry. Using a pastry bag and frosting tip (or a sandwich bag with the corner cut) fill the raspberries with yogurt.
Carefully place all the filled raspberries in an airtight container and freeze for about 20-30 minutes, just to set the yogurt.
While the raspberries are chilling, prepare the chocolate by chopping it up into chunks and melting over a double boiler, microwaving it on 50% power for 1-2 minutes, or heating in a chocolate fondue dish.
Once smooth, get ready to dip the raspberries with a fondue dipping stick. You can submerge the raspberry completely, or just cover the bottom half with chocolate so you can still see the top filled with yogurt.
Place in a dish or on wax paper to dry. Refrigerate for about 10 minutes to set the chocolate.
I served a few of my chocolate covered raspberries over the vanilla bean Müller® Ice Cream Inspired Yogurt.
