With a family as big as mine, I often feel like I’m making the same dishes all too often. Baked chicken, spaghetti, lasagna, casseroles.. etc. We always have chicken on hand because it’s not only affordable but you can really do so much with it. Last week I wanted to try something different, and since there’s so many boys and men in my home I thought this would appeal to their tastes. An easy bacon wrapped stuffed chicken recipe – the perfect man food!
It’s really a very simple recipe, I had some Boursin Red Chili Pepper Gournay Cheese in the fridge and a bag of boneless chicken breast in the freezer. Some simple seasonings, a dash of salt and pepper for flavor, and then the kicker. WRAP IT IN BACON!! Bake it in the oven and you’re set! The men in my life loved it, my son even came home early when he saw me post it on Instagram! That makes this a perfect last minute dinner recipe for the special man in your life for Father’s Day, or really any other day. Go ahead and give it a try, serve with rice and a salad and you’re set! Fancy dinner on the cheap, and it’s so pretty seeing the flavors rolled up in one little chicken.
Bacon Wrapped Stuffed Chicken Ingredients:
- 2.5 – 3 pounds boneless chicken breasts (about 11 chicken breasts)
- salt & pepper
- 1 package (5.2 oz) Boursin Red Chili Pepper Gournay Cheese
- 1 cup chopped spinach
- bacon (1 slice for each chicken breast)
Directions:
Begin by preheating your oven to 350 degrees.
Using a mallet or meat tenderizer, or even the back of a wooden spoon, flatten the chicken by pounding it down.
You want the chicken thin so it’s easy to roll up, and the thickness should be even throughout.
Once flat, season each side with salt and pepper and then spread a layer of the cheese across the top of the chicken.
Top with some spinach, then taking the smaller corner of chicken, gently roll up as shown.
Wrap with one slice of bacon, going in sort of a diagonal direction.
Place on a cookie sheet lined with foil.
Once all the chicken is stuffed and wrapped, bake for about 35-45 minutes or until the bacon is cooked through and the juices run clear.
Let cool for a few minutes before removing.
It’s great served with a colorful salad and rice or pasta on the side.
