I’ve told you time, and time again just how much I adore breakfast. Every day I have to have some sort of breakfast food before I can go about my day. Even if I wake up and have my morning coffee, send the kids off to school, start cleaning and hours later realize I haven’t eaten. I still have to have breakfast before I have that leftover pizza, since by then it’s lunchtime. Is that weird? We often have breakfast for dinner too, because I just love it that much! My kids, however, are more concerned with other things during the school week. Like waking up on time and cramming all their homework in their back.. oh, and don’t let me forget about my daughter and her hair. Since our house is so hectic as it is (you do realize there’s five children here… need I say more?) I’m always trying to figure out quick things they can grab and go. I love making muffins or buying those breakfast bars, but all of that has so much sugar and they need nutrition. Well, all of that changed!
Do you remember a few months ago I went to Austin, for the BlogHer Food Conference? I had such a fantastic time, made many new friends and met some pretty awesome companies. I made a tasty sandwich to share here, with just a few ingredients I had in the kitchen. We’ve made such a variety of different flavors and they’re all so delicious. This particular one is everyone’s favorite.
Spinach, Ham and Pepper Jack Cheese Breakfast Sandwich Ingredients:
- 1 English muffin, split in the middle
- 1 tablespoon butter or margarine
- 2 slices deli style smoked ham
- 3 baby spinach leaves, shredded
- 1 large egg
- 1 tablespoon pepper jack cheese

I prefer biscuits or english muffins for a breakfast sandwich. I suppose pancakes would be good to, but I think it would be too flimsy.

This would be so perfect for me! As a college student, I never really have a lot of time in the morning to make breakfast. With this bad boy, I could make a delicious hot breakfast without having to worry about cleaning up a big mess.
