I have loved smoothies for years, probably since I was pregnant with RiRi (who is now 16) and I’d stop on my way to work and buy one for breakfast every morning. It’s one of my favorite ways to consume a meal and I typically just throw in whatever fruits, vegetables, yogurts and juices are available in my kitchen. When my bananas begin to brown I’ll peel them and freeze them, and I’ll do the same for any fruit we have that hasn’t been used yet before it begins to soften. Frozen fruit or vegetables is perfect for smoothies because you don’t even need to add ice. No watering down of flavors occurs, and that is excellent. Recently smoothie bowls have become all the rage, and I have to admit at first I just didn’t understand the concept.
Call me a creature of comfort, but I just preferred my smoothie out of a cup like any normal person and was not interested in trying it any other way. I just didn’t understand this new trend! However, once I tried my first smoothie bowl complete with more fruit on top and crunchy toppings I was hooked. Then I chastised myself for judging and quickly started jotting down notes for more ideas. Think of it as a smooth and thick homemade oatmeal, finished off with all your favorite toppings.
For this smoothie bowl I decided to create a fun contrast of flavors with a swirl of color. For the green side I used kale (I prefer this in my smoothie over spinach), a banana, a couple of strawberries, and some frozen pineapple. I added a little honey for sweetness and then for the liquid I used Cacique® Yogurt Smoothie in the Pecan with Cereal flavor. For the purple colored side I used apricots, frozen cherries (the pits are already removed!), some more honey and the rest of the bottle of the Cacique® Yogurt Smoothie. I topped the bowl with some strawberries and blueberries and a lot of crunch with granola, almonds, toasted coconut and chia seeds.
I’m notorious for skipping meals and leaving bowls of cereal to get soggy, but I’ve always loved a good smoothie. This cherry apricot and green swirl smoothie bowl is a delicious way to combine my favorite way to consume fruits and breakfast.
Now, let’s talk about the Cacique® Yogurt Smoothie. This yogurt is rich in protein (a total of 8 grams), a good source of calcium (25% of Daily Value) and probiotics, and it’s low in calories and cholesterol. The yogurts come in a variety of flavors from Strawberry to Papaya, but I decided to use the Pecan with Cereal flavor for this particular recipe because I felt it would add some depth and some great nutty flavor.
Each of these bowls is actually enough to serve two people, and I totally split mine with my Dev. It was his first time trying a smoothie bowl, but he loves smoothies. Needless to say, he loved it and I’m willing to bet you will to!
Green Swirl Smoothie Ingredients:
- 1 1/2 cup kale
- 1 banana
- 2 medium strawberries
- 1/2 cup frozen pineapple
- 1 1/2 tablespoons honey
- 1/2 bottle Cacique® Yogurt Smoothie – Pecan with Cereal
Cherry Apricot Smoothie Ingredients:
- 3 apricots, pitted
- 1 cup frozen cherries, pitted
- 1 1/2 tablespoons honey
- 1/2 bottle Cacique® Yogurt Smoothie – Pecan with Cereal
Toppings for Cherry Apricot and Green Swirl Smoothie Bowl
- 2 medium strawberries, sliced
- 2 tablespoons granola
- 1 tablespoon sliced almonds
- 1/2 cup blueberries
- 2 tablespoons toasted coconut
- 1 teaspoon chia seeds
Directions:
Begin by adding the kale to your blender.
Top with the banana, strawberries (I leave the stem on) and the frozen pineapple. Add the honey and the yogurt and blend until smooth.
Pour the green smoothie into your chosen bowl, clean out the blender, and add the apricots and frozen cherries.
Add the honey, then top it off with the yogurt. Blend until smooth.
Using a large spatula or cooking spoon, carefully create a space between the side of the bowl and the green smoothie and pour the cherry apricot smoothie into that space. As you continue to pour, bring the spoon out more towards the middle. This will create the cool swirl effect.
Slice up your strawberries and line them along the outer rim of the bowl.
Add the granola, almonds, blueberries, toasted coconut, and the chia seeds. Enjoy!
