BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenWell, here we are in a New Year… Happy 2015!

If you’re a big sports fan, you know what this time of year means. You guessed it – the College Football Championships!!

If you’ve been around for a while, you know that my family is a football one. With four boys and a husband who played football most of his life, it’s a big deal around here. Even more-so now (if that’s possible) that lil G is a sophomore in high school and getting more serious about figuring out which college he’ll be attending and playing football at. We enjoy this time of year when we watch some of our favorite schools and get to know some of the players that may eventually move up to the next level once they graduate.

Dr Pepper Limited Edition College Championship Football #PassThePepper #ad #cbias - Mama Harris' KitchenAs you know, one of my favorite aspects of this time of year is the food. I love a good game day spread, and even though I have plenty of recipes for these occasions, one more could never hurt. That’s why when I was recently shopping at Food 4 Less and spotted the Dr Peppers with the limited edition College Championship packaging, I just knew I had to create a recipe with it. We love Dr Pepper for our get togethers as it is, but you know I love to cook and bake with soda too.

Dr Pepper Limited Edition College Championship Football #PassThePepper #ad #cbias - Mama Harris' KitchenYup. I had an idea.

I’m a huge fan of nachos. Huge.

Upon thinking about it, I realized I’d never shared a recipe here for one of my favorite food groups (nachos!!) and I thought to myself how crazy that was. They are the perfect food for College Game Day!

Then I thought about chicken nachos.. and oh wait, BBQ chicken! That’s when this creation was born.

I used the Dr Pepper as an ingredient in my barbecue sauce, along with other spices and ingredients. This sauce has such a fabulous flavor! It’s sweet and tangy with a bit of a kick and it’s perfect with the grilled thigh meat I already had on hand. Since thigh meat tends to be juicier and a bit more flavorful, it complimented the flavors in the sauce. Because the sauce has such a bite to it, no salsa is needed. I did whip up a batch of my homemade guacamole while the nachos were baking, and of course these were a hit! Even though we had them for dinner, I’ll definitely be adding them to my food table at our next homegate! You can too, and here’s a $2.00 off coupon for you!

Dr Pepper Float #PassThePepper #ad #cbias - Mama Harris' KitchenWhile I was enjoying my nachos, I thought of a fun drink to make with the Dr Pepper too. Why not a Dr Pepper float?

Dr Pepper Float #PassThePepper #ad #cbias - Mama Harris' KitchenMy favorite ice creams always have to have cherry in them, and I just so happened to have some cherry vanilla ice cream on hand. Why not serve it with Dr Pepper for a fun float? Just fill up a glass with cherry ice cream.

Dr Pepper Float #PassThePepper #ad #cbias - Mama Harris' KitchenTop it with some Dr Pepper…

Dr Pepper Float #PassThePepper #ad #cbias - Mama Harris' KitchenAnd enjoy! The cherry vanilla ice cream was the perfect compliment to the Dr Pepper.

Now, onto the nacho recipe..

Ingredients for Dr Pepper BBQ Sauce:

  • 1 tablespoon vegetable oil
  • 1/2 medium yellow onion, minced
  • 2 garlic cloves, minced
  • 1 (15 ounce) can tomato sauce
  • 1/4 cup balsamic vinegar
  • 2 tablespoons apple cider vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Ingredients for BBQ Chicken Nachos:

  • 1 pound grilled chicken thigh meat, lightly shredded or cubed
  • 1 bag of tortilla chips
  • 3 cups sharp cheddar cheese, grated
  • 2 Roma tomatoes, diced
  • 1/4 cup black olives, sliced
  • 2 green onions, sliced
  • 1-2 limes
  • sour cream
  • guacamole

Directions for Dr Pepper BBQ Sauce:

Dr Pepper BBQ Sauce #PassThePepper #ad #cbias - Mama Harris' KitchenBegin by heating the vegetable oil in a medium saucepan. Add the minced onions and saute over medium heat, stirring occasionally. Once soft and fragrant, add the minced garlic and saute for another minute or so.
Add the tomato sauce to the mixture and stir well. Lower the heat just a tad to medium/low.

Dr Pepper BBQ Sauce #PassThePepper #ad #cbias - Mama Harris' KitchenAdd the vinegars, brown sugar, honey and Worcestershire sauce, then stir them in.

Dr Pepper BBQ Sauce #PassThePepper #ad #cbias - Mama Harris' KitchenAdd the Dr Pepper, stirring well.

Dr Pepper BBQ Sauce #PassThePepper #ad #cbias - Mama Harris' KitchenAdd the seasonings and continue to stir. Keep the sauce over medium/low heat for about an hour to an hour and a half until the sauce has reduced and thickened to your liking. I like my sauce a bit thick, so I went more towards an hour and a half.
Be sure to stir every so often, especially as it thickens.
Remove the sauce from heat, and sauce will continue to thicken as it cools.

Directions for BBQ Chicken Nachos:

BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenAdd the pre-grilled chicken to a medium pan and heat over low.

BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenAdd about 1-2 cups of the sauce to the chicken, depending how saucy you want it. Mix it around a bit to be sure all the chicken is covered.
Remove from heat.

BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenPreheat the oven to 350 degrees.
Line a baking sheet with foil, then spray with non cooking spray.
Cover the baking sheet with a layer of chips.
Top with half of the BBQ Chicken, spreading evenly over the chips.

BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenEvenly sprinkle with half of the shredded cheese.
Top with another layer of chips.
Spread the remaining chicken over the second layer of chips.
Sprinkle the rest of the cheese on the top, being sure none is spilling over the sides of the baking sheet. Place the baking sheet in the preheated oven, and let cook for about 10 minutes or until all the cheese has melted.

BBQ Chicken Nachos #PassThePepper #ad #cbias - Mama Harris' KitchenRemove from the oven and squeeze half a lime all over the top of the nachos.
Top with the tomatoes, olives and green onions.

(AD) There has been a lot of cooking going on this year, so I’ve tried to make life a bit easier by getting creative with my leftovers. These pulled pork totchos are a great example of leftovers with a few key ingredients to create something new to keep our meals exciting. Adding a few key ingredients like @lamorenausa adobo peppers and jalapeños and carrots definitely livens up something simple. La Morena peppers are hand selected, using only the highest quality peppers to bring you authentic home style flavors of Mexico. I purchased my La Morena items from my local Safeway, but you can find them at your favorite grocery store in the international food section. #PayItForwardwithLM #VivaLaMorena #WeCanWithLaMorena

INGREDIENTS:
- 32 oz tater tots
- 2 cups shredded cheese (Mexican blend + Pepper Jack)
- 2 cups prepared bbq pulled pork (check my pulled pork sliders recipe!)
- 1/2 can La Morena Adobo Peppers & Sauce
- 2 tablespoons sour cream
- 2 tablespoons ranch dressing
- 1 cup pico de Gallo
- 1/2 cup guacamole
- 3 chopped green onions
- 3-4 La Morena jalapeños and carrots, sliced

INSTRUCTIONS:
Prepare tater tots as instructed, in air fryer or oven. Heat oven to 450°.
Cover the bottom of a large cast iron skillet with the cooked tater tots.
Top with 1 1/2 cup of cheese.
Combine the chopped adobo peppers and sauce with the prepared bbq pulled pork. Spread the pulled pork mixture on top of the tater tots, then top with the remaining cheese.
Bake in the preheated oven for 5 minutes.
Top with sour cream, ranch, pico de Gallo, guacamole, green onions, and sliced jalapeños and carrots.

Enjoy!! 😋

Happy December, all!! 🎄Since it’s basically Christmas now, it’s time to share ALL the holiday cookies!

Every year I join my friend @natashanicholes as she heads up her #HousefulofCookies virtual cookie swap, where many of us share some sweet treats for the holiday season.

This year I’ve created Cranberry Pistachio Citrus Cookies to share as my contribution. 🍪 I know that a lot of things have turned “virtual” throughout this year, but a little virtual bake-off is a fun way to connect with some of your favorite people!

Hello Instagram fam! 💖 There’s some new faces around here and it’s been a while since I showed mine!

I’m Dawn, creator of Mama Harris’ Kitchen, and I’m so glad you’re here with me! In this space I share my family-friendly recipes for all occasions, whether it be a 30-minute meal for those busy weeknight dinners or a full spread for entertaining a crowd - and everything in between.

Mama Harris’ Kitchen began back in 2012, in fact it’s 8 years this month! 🥳 What started as a way to document my newfound cooking hobby while managing my “new” life as a stay-at-home wife and mom to a 1 and 3 year along with teens and preteens, and it quickly grew into what it is now - a recipe resource for busy families like mine that enjoy flavorful and comforting home-cooking using pantry staples along with fresh and local ingredients as often as possible.

🍿Five fun facts about me:
1. I LOVE elephants! 🐘 I collect a lot of elephant items, whether it’s trinkets or artwork, notepads etc. I love what elephants symbolize and I truly love anything elephant related.
2. I’m a total plant lady! 🌱 I have about 35 houseplants, give or take, and there’s still more on the list of wants. Plants have become such a peaceful outlet for me, and I feel that they really center me within my space. I love the element plants bring to your space and the feel of your home with them in it, and new leaves are so exciting!
3. I have seven tattoos and I have plans for about eight more. 💉 Those that know me aren’t surprised, but those that follow me here tend to find it a bit surprising. 🙃
4. I’ve been a mother for a long time, over half my life! I’ve also been a lot of different “types” of mom - teen mom, single mom, working mom, stepmom, stay at home mom, PROUD mom, military mom, mother in law - the list goes on. No matter what, motherhood looks different for everyone and there’s unique challenges and experiences each mother faces. Please be gentle with yourself! ❤️At the end of the day we’re all just trying our best!
5. I’m a bit of an introvert, and often struggle with the “social” aspect of social media. I tend to go silent sometimes, but I’m working on it.

☀️Thank you for joining me here!
