Yes, it’s that time of year. Most people make resolutions for health and change and as we all know January is the prime time that folks decide to make those changes in their lives. I know that personally, even without making resolutions, after the holiday season I prefer to choose meals on the lighter side. Sometimes all of those macaroni and cheese and mashed potatoes and gravy type meals get old, and I’m more ready to devour salads and soups that are on the lighter side. I also know that sometimes when people do resolve to eat a bit healthier, it can tend to get boring after a while. They decide on salads without dressings or dry chicken because they equate healthy eating with bland food. It doesn’t have to be like that!! Some of the easiest meals can be made in 30 minutes or less and they have tons of flavor and color. Colorful food makes me happy, because that means you’re getting some of those essential vitamins that your body needs. You also don’t have to rely on chicken alone. You can still eat steak and have it be a healthy meal. It’s more dependent on the cut and the process in which you cook it. To help you out, I’ve gathered some amazing and impressive recipes from some of my best blogger buddies. Of course you have your usual salads and soups, but there’s also pastas, breakfast, wraps, appetizers and everything is flavorful and lovely.
