I have this theory that I’ve repeated many times over for the past ten years or so. When October hits, Halloween is here in a flash and once Halloween passes the holidays seemingly have come and gone. Seriously, it happens in such a flash it’s sometimes difficult to prepare for. So it makes sense that in the beginning of October I’m in full preparation mode for the upcoming holidays and all of the food and goodness that comes along with special moments with family and loved ones.
One thing that can get hard to manage over the holidays is time. I have a big family as it is, and when our extended family is visiting I’m struggling to prepare enough food to feed us all and it can be really difficult when everything needs to go in the oven. I’ve made do with alternate recipes that can use the slow cooker or stove-top and I’ve even printed out recipes and planned times accordingly so everything can be ready at once. It never fails that I end up getting only a few hours of sleep and marathon cooking for 36+ hours!
