Birthday Cake Ice Cream Homemade with sprinkles, marshmallows and cherries in the mix #SprinklesandMAYhem | Mama Harris' KitchenIt’s still the month of May (wow this has been a long month!) so I’m back with more ways to celebrate my birthday in one of the best ways possible! If you’re new around here I’ll get you up to speed. My husband and I are both May babies and we often feel that May is a big month to celebrate. Not only is it our birthday month, but my friend Mandi over at Chewsy Lovers is also a May baby so she and I have teamed up to bring you our May celebration series entitled Sprinkles and MAYhem. We’re celebrating all over the internet with the hashtag #SprinklesandMAYhem and would love to party with you too! I try to figure out the person’s favorite flavor, if there’s a fun theme, or if it’ll be a sheet cake or a 3 tier masterpiece. My husband, on the other hand, always plans the ice cream portion. He loves to buy a huge bucket and while we’re cutting up the cake to serve he’s got the ice cream right there ready to be scooped next to the cake. So I decided to combine the two and add all the fun of birthdays in one big tub of my own! My birthday cake ice cream tastes just like yellow birthday cake, and I even have the sprinkles, cherries and marshmallows in the mix. Perfect for a summer birthday or anytime you feel like celebrating life. Birthday optional.

Birthday Cake Ice Cream Ingredients:

  • 5 cups heavy whipping cream
  • 3 cups half and half
  • 1 1/4 cup white granulated sugar
  • 1 1/2 teaspoon vanilla extract
  • 2 cups yellow cake mix
  • 1 cup marshmallows
  • 1 1/2 cups maraschino cherries, halved with stems removed
  • 1/2 cup ice cream sprinkles

Directions:

Put in a freezer bag and freeze until ready to use.

Begin by mixing the cream, half and half, sugar and vanilla. Add the cake mix and whisk until smooth.

We have this cute old fashioned ice cream maker (affiliate link) that’s a bucket with a center container and motor that churns the ice cream until it’s soft serve in texture.

Birthday Cake Ice Cream

Celebrate your special day in style with this homemade birthday cake ice cream with sprinkles, marshmallows and cherries in the mix.

Ingredients

  • 5 cups heavy whipping cream
  • 3 cups half and half
  • 1 1/4 cup white granulated sugar
  • 1 1/2 teaspoon vanilla extract
  • 2 cups yellow cake mix
  • 1 cup marshmallows
  • 1 1/2 cups maraschino cherries, halved with stems removed
  • 1/2 cup ice cream sprinkles

Instructions

  1. Before starting prepare the maraschino cherries and using a cheese cloth or paper towel carefully squeeze out any excess liquid. Put in a freezer bag and freeze until ready to use.
  2. Begin by mixing the cream, half and half, sugar and vanilla. Add the cake mix and whisk until smooth.
  3. Follow the directions for your ice cream maker as far as ice and rock salt.
  4. Once the ice cream is thick, but still able to be stirred, mix in the marshmallows and fold them in.
  5. Add the sprinkles and carefully fold them in, they might streak a bit.
  6. Take the cherries from the freezer and mix those in carefully. Put the top on the mixture and add to the freezer. I froze this overnight to get a firm texture.
  7. Once ready the top of the ice cream may still look soft due to the cake mix in the ingredients, but once you scoop it'll look just like ice cream from your local parlor!
  8. Serve at your next celebration. It's great plain, or if you want to add whipped cream, sprinkles and a cherry.
