Southern Creamy Cauliflower-Broccoli Bake

My family eats our vegetables in numerous forms. Of course I like a good salad, I love roasted veggies, sauteed, boiled etc. This, however, is a different take on your average broccoli or cauliflower dish.
The photos don’t do it justice; sorry, I tried! I promise it’s delicious though!

This dish has some pretty definitive southern roots, and you can find many variations of it online. My family loves it, in these photos I served it with my Deviled Chicken in White Wine Sauce and my Pull-Apart Garlic Cheesy Bread. In the past I’ve served it with my Garlic and Herb Seasoned Potato Wedges and my Savory Boneless Pork Chops and many other dishes. Really, it goes with a variety of dishes, you and your family are sure to have a new favorite!

Ingredients:

  • 2 cups water
  • salt, for boiling water
  • 1-1/2 to 2 pounds of broccoli and cauliflower pieces
  • 2% or whole milk
  • 5 tablespoons butter or margarine
  • 4 tablespoons flour
  • salt and pepper to taste
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup italian bread crumbs
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon paprika

Directions:
Preheat oven to 450 degrees. In a large saucepan bring water and salt to a boil. 
Add broccoli and cauliflower florets, and bring to a boil.
Cook on medium heat just until they begin to turn tender. 
Drain the vegetables, reserving the liquid.
Pre grease a 2 quart casserole dish and arrange the cooked vegetables in the dish. Add milk to the measuring cup with the reserved vegetable broth until it reaches a total of 2-1/2 cups of liquid.
Melt 3 tablespoons of butter in a medium saucepan.
Blend in the flour, until smooth. Gradually stir in the milk mixture.
Season with salt, pepper and nutmeg.
Cook, stirring constantly, until thick and smooth.
Pour sauce over broccoli and cauliflower mixture.
Dot with remaining butter or margarine.
In a bowl, combine italian bread crumbs, parmesan cheese, and paprika.
Mix together until well blended.
Evenly sprinkle bread crumb mixture over the vegetables. 
Bake for about 20 minutes, until bubbly.
Serve warm, season as desired. Enjoy!

      Yes! This would be a great dish for Thanksgiving, but you may want to double it if you’re feeding more than 4 or 5 people. If you double it, extend the cooking time a bit more, as the dish would be larger too. 🙂

      The only way to broaden his tastes is just to make new things! My family all turned their nose up at this dish, it didn’t look or sound like what they’d like, but they all gobbled it down! Especially little G, he is sooo picky, but he’s gotten easier because he’ll at least try something once, and he’s discovered he actually like a lot more things than he’d normally try on his own!
