There’s one thing my kids could eat morning, noon and night if I let them. Cereal.
They just can’t get enough of it. My babiest will continue to pour more cereal into his milk if I don’t keep a close eye on it, and if dinner isn’t ready early enough he’ll beg for a bowl of cereal instead.
Needless to say that we always have plenty of cereal in our house. What can I say, they get it from their Daddy.
Since there’s always cereal stocked in our pantry, sometimes I’ll look at a few of the boxes and get a bit inspired for some recipes. What can I say, I find inspiration everywhere! Staring at our boxes of Fruity Pebbles and Cocoa Pebbles I was inspired to create something for the fun holiday season. Since it involved cereal I knew the little ones would want to help!
I got the idea to create a little truffle with the cereals. Mix with a bit of marshmallow and butter and adding some coconut to the cereal mixture, then dipping the Fruity Pebbles into white chocolate and the Chocolate Pebbles in milk chocolate. Oh, and then we add sprinkles! That’s the funnest part!
For a real truffle appearance, they were served in mini cupcake liners that were just the perfect size for these fun little treats. We used a variety of different holiday themed sprinkles and each of us had our favorites as far as which flavor we liked. I prefer the white chocolate with the Fruity Pebbles but Mr. Harris preferred the double chocolate flavor to the Cocoa Pebbles covered in milk chocolate. I couldn’t decide on a favorite for the sprinkles, but I think I really liked how the gold and silver looked.
Once you bite into these adorable holiday truffles you can see all the flavors and textures of the Pebbles Cereal. I really like how they both looked and they definitely would add some fun to the dessert table at your next holiday event. These would also be fun to make at a party to keep little ones busy. They’re just the right amount of textures and mess that kids will just love!
Holiday Truffles with Pebbles Cereal Ingredients:
- 2 tablespoons butter
- 2 cups marshmallows
- 3 cups Post Fruity Pebbles or Post Cocoa Pebbles
- 3 tablespoons coconut flakes (optional)
- 3 cups milk chocolate or white chocolate chips
- 1 tablespoon vegetable oil (optional)
- sprinkles
Directions:
Begin by melting the butter over medium heat in a heavy bottomed saucepan. Once butter has melted, add the marshmallows. Stir with a spatula, still over medium heat. Once marshmallows have melted and are smooth, remove from heat.
Add in the cereal and the coconut flakes.
Stir in together with the spatula until the cereal has soaked in all of the melted marshmallow.
Take enough of the mixture to create a 1.5 inch ball with it. Carefully roll the ball (it will be hot!), then place on wax paper until cool.
Before the mixture has set all the way, stick a toothpick down the center of each ball, this will help with the dipping process.
In a microwave safe bowl, add the chocolate chips. Heat in microwave, 15 seconds at a time and stirring in between each heating, until smooth. Add vegetable oil if necessary to thin out the chocolate for dipping. Take each ball by the toothpick end and dip into the melted chocolate.
Using a circular motion, take out the ball from the chocolate creating a smooth finish.
Then stand with the toothpick end in styrofoam or cardboard with wax paper placed on top to catch any chocolate drippings.
Once the chocolate and sprinkles on the truffles has set, use miniature cupcake liners for the final product. Simple poke a hole through the middle of the liners with a toothpick and slide each truffle ball into the liner, toothpick first. Once the truffle is inside of the liner, gently pull the toothpick out through the bottom. Voila!
Serve on a platter for your next holiday event.
