I believe I’ve mentioned my six year old son’s obsession with peanut butter and jelly sandwiches before, but I think it’s worth mentioning again. Did I tell you he’s obsessed? He would have a sandwich with every meal if he had things his way, which means that this little combination is on my mind often too. Sometimes I’ll make PB&J inspired treats, quite often actually!
When I tried these Fiber One Peanut Butter cookies recently, I just knew I had to try to capture that delicious salty sweet combination that we all learned to love in our childhood. The sweetness of fruit balanced by salty nut taste of peanuts in a creamy butter has a balance in flavor that has developed quite a following. While technically this sundae recipe doesn’t really include peanut butter, jelly, or bread – it’s definitely a grown up snack that will take you back to your PB&J filled childhood in just one bite.
It’s also fun enough to serve to the kids. Who doesn’t like a colorful treat and delicious cookies? Use whatever flavored fruit you prefer, it doesn’t even have to be strawberry. You could even be a bit daring and combine a few fruit flavors and nobody would be the wiser.
