Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenOne thing I love about living in California is the diversity in our food. There are so many different cultures that span all across California, and it’s evident in all of the restaurants and grocery stores as well as the food options. I think this is great, because there’s such a variety of foods to try and taste, which of course helps to expand your palate. What I also love about California is the availability of farms that are local to the area, like Foster Farms. There’s a new line of products that Foster Farms is introducing, including the Simply Raised antibiotic free chicken that I’m using for this sponsored post and recipe I’ve developed with the Simply Raised boneless chicken breast.

If you’re not already familiar with Foster Farms chicken, they have been family owned and operated since 1939 and is the West Coast’s leading poultry producer. There’s been a major update which features new packaging, new logo and three new quality products. There’s truly something for everybody. The Simply Raised line is available now at all major markets and retailers with the Organic line is available at Costco and select stores.

Today I’m sharing a recipe reminiscent of my California upbringing and the diverse foods that can be found all over. I decided to make some easy chicken gyros with a homemade creamy tzatziki sauce that’s perfect for spooning on top of the gyros or even dipping sliced vegetables into. I used the Simply Raised Foster Farms chicken which was already cut into Thin Sliced Breast Fillets. What I love about the Foster Farms Simply Raised line is that there are no antibiotics administered, ever. It’s also 100% vegetarian feed, American Humane Certified. Produced with no added sodium and Simply Raised is locally grown throughout California, Oregon and Washington and is available for $6.49/lb.

I enjoyed this dish because it’s simple. Basic ingredients that create a delicious result. Colorful and chock full of vegetables, it’s a great compliment to the simplicity of the Foster Farms Simply Raised chicken. Of course you can add or remove ingredients as needed if they aren’t your thing, but this is a simple weeknight meal that is sure to impress your family!

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' Kitchen

Chicken Gyro Ingredients:

  • 1.5 lb boneless skinless thinly sliced Foster Farms chicken breast
  • 1 tablespoon extra virgin olive oil
  • juice of 1 lemon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dry oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dry parsley
  • 1/4 teaspoon corn starch
  • 1 orange bell pepper, deseeded and sliced thinly
  • 1/2 small red onion, thinly sliced
  • 1 cup grape or cherry tomatoes, quartered
  • 1 cup shredded romaine lettuce
  • feta cheese
  • tzatziki sauce
  • 6 slices of pita bread

Tzatziki Sauce Ingredients:

  • 1/2 cucumber, peeled and sliced
  • 2 cups nonfat Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons dry dill weed
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground pepper
  • pinch of sugar

Directions:

Combine the smoked paprika, oregano, salt, pepper, parsley and corn starch with olive oil and lemon juice. Trim any fat on the chicken, then cut each fillet in half and slice into small pieces.

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenAdd the spices to a one gallon freezer bag with the lemon juice and oil. Combine well, then add the chicken pieces.

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenSeal the bag and roll the chicken in the sauce until it’s all covered. Refrigerate for at least 30 minutes while you prepare the remaining ingredients.

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenGather the ingredients for the tzatziki sauce, being sure to peel and dice the cucumber. One half of a lemon will yield just about 1 tablespoon of lemon juice.

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenCombine all ingredients in a blender and pulse until mixed. Cover and refrigerate.

Easy Chicken Gyros with Tzatziki Sauce #FosterFarmsFresh AD | Mama Harris' KitchenPlace the marinated chicken in a large skillet and cook over medium heat. Discard remaining marinade.

Easy Chicken Gyros and Tzatziki Sauce

These easy chicken gyros are colorful and full of flavor and come with a delicious homemade tzatziki sauce that's perfect for dipping veggies.

Ingredients

    Chicken Gyro Ingredients:

  3. Seal the bag and roll the chicken in the sauce until it's all covered. Refrigerate for at least 30 minutes while you prepare the remaining ingredients.
  4. Gather the ingredients for the tzatziki sauce, being sure to peel and dice the cucumber. One half of a lemon will yield just about 1 tablespoon of lemon juice.
  5. Combine all ingredients in a blender and pulse until mixed. Cover and refrigerate.
  6. Place the marinated chicken in a large skillet and cook over medium heat. Discard remaining marinade.
  7. Once the chicken is cooked, prepare your area to put together the gyros.
  8. Heat up the pita bread, then add the lettuce, bell pepper and onions.
  9. Top with chicken, tzatziki sauce, feta cheese and tomatoes.
  10. I like to wrap mine halfway with foil to hold it together when it's served.
  11. Enjoy!

    That’s a nice looking dish. Do you know if Foster Farms chickens are cage free? Love the idea of organic and vegetarian fed, just curious about the rest of the environment… I need to try this recipe out soon!
