10 Pasta Recipes with a Twist!

pasta recipes

Disclosure: My "10 Pasta Recipes with a Twist" recipe collection is part of a  sponsored opportunity by Foodie.com. I personally selected each recipe to be added to the collection. As always, all opinions are my own.Mmmm, pasta. I just love cooking with pasta. Whether it's served on the side, or as a part of a meatless meal, or even an easy one pot meal - sometimes pasta just hits the spot. You know who else loves pasta? Kids! I know mine do. When I first started getting into cooking, most of my dinners always included some pasta in some sort of manner. There's so many different forms, shapes and sizes that it comes in too. Shells, elbows, bows, and long noodles, it's an easy way to make dinnertime fun. You can add chicken, steak, and seafood, or keep it meatless with lots of veggies. I love the variety you can get from pasta and it's so easy to prepare, which makes it a perfect weeknight meal in my house. Add a little seafood and it's instant date night instead! I've asked some of … [Continue]

Baked Spice Cake Doughnuts made with Olive Oil

Baked Spice Cake Doughnuts made with olive oil

Did you know that August is National Olive Oil Month? Not only is that a thing, but Pompeian is doing their part to celebrate. In honor of National Olive Oil Month, Pompeian is encouraging people to take the Pompeian Pledge by swapping butter for olive oil in everyday recipes. I took the pledge myself, and have had fun throughout the month of August swapping out butter for olive oil in some of my favorite recipes. I thought a great challenge for this would be to use it in baked goods like cake or cookies. So I decided to make some Baked Spice Cake Doughnuts, which is slightly reminiscent of my Pumpkin Spice Bread Muffins and my Carrot Cake Cupcakes, without pumpkin or carrots of course. To take it an extra step, instead of icing the doughnuts I wanted to coat them in cinnamon sugar. Typically you would brush melted butter on the doughnuts before coating them in cinnamon sugar, but this time I brushed them with more olive oil. You have to trust me on this, the blend of rich spices … [Continue]

The older kids just started school, summer is winding down, football season is picking up with high school football games, daily practice, and then along comes homecoming and all that fun stuff. It's also when Lil G's birthday rolls around. Every year when we celebrate his birthday we have to look deep into his schedule to plan dates and times that coordinate with our other friends whose children are involved in sports and other extracurricular activities. I get it, we're all busy. So while Lil G's birthday isn't until … [Continue]

Fun Back to School Lunches + the #PowerYourLunchbox Pledge & Contest!

Back to school power your lunchbox pledge

Disclosure: I was provided free product from Produce for Kids and was compensated to promote the Power Your Lunchbox pledge. As always, all thoughts and opinions are my own. Last night we attended D-Man's Kindergarten orientation, and it became real just how close we are to the beginning of a whole new era! For so long it's been D-Man, RoRo and I at home while the older kids are off at school. Last year D-Man began preschool for a few hours each day and he loved it so much. Now that he's starting Kindergarten I want him to love it just as much, even if the days are a bit longer than preschool was. One of the ways I plan to do that, is by creating fun and tasty lunches for him that he can … [Continue]

Disclosure: This shop has been compensated by Collective Bias, Inc. and its advertiser. As always, all opinions are mine alone. Well, here we are.. a little over halfway through August. In my house that means we're on the second week of back to school season for our older kids but it also means that football is underway. For our high schooler, football practice has been going on since June, but very soon the high school football games will be underway and for a houseful of (mostly) boys, this is their favorite time of year. It's not just the high school football either, since the preseason for NFL games just began last week and that just means that Fall is just around the corner. Caramel … [Continue]

Family Favorites – Goulash & Garlic Bread

goulash family favorites classico

Disclosure: This shop has been compensated by Collective Bias, Inc. and its advertiser. As always, all opinions are mine alone. Back when I was growing up, my family structure was quite different from the one I've created with my husband. Back then, both of my parents worked outside of the home, and (depending what part of my childhood we are discussing) my dad often worked various and random hours in his retail job. I may not have mentioned it before, but I was an only child growing up so when my parents made a large meal we could stretch it for days. One of my family favorites I remember most vividly was this goulash my parents would mix up. It was sort of like spaghetti, but with … [Continue]

Mango Pancakes with Cinnamon Honey Syrup

mango pancakes with cinnamon honey syrup

It's no secret that my husband is the official pancake maker in our family. I wish I could replicate his success, he uses a prepackaged mix that you mix with eggs, oil and milk. He doesn't usually follow the guidelines listed, as he eyeballs the mix to be sure it's how he wants it. Sometimes he'll add some vanilla or cinnamon to make it a little different but they are always thick, light, and fluffy. I've attempted homemade pancakes quite a few times, but they always result in a heavier and doughier combination and they are never as tasty as his. The idea for Mango Pancakes with Cinnamon Honey Syrup So a few months ago when I was approached by the National Mango Board to come up with a … [Continue]

More specifically, when summer begins and when it ends. It never fails, just when my family gets used to our summertime schedule, back to school we all go. This year is specifically different because not only do the older kids return to school, but the littlest ones are starting school too. This time of year I'm always looking for something quick and … [Continue]

Disclosure: This shop has been compensated by Collective Bias, Inc. and its advertiser. As always, all opinions are my own. Do you ever get busy during the day, and you just forget about eating? Whether it's because you're on the go, busy at work or dealing with a sick child, there's never a good reason to skip a meal. I should know, because this is one of my struggles. In fact, I've had this issue for many years, since I was a teen. I become so immersed with what I'm doing, that I literally need to schedule snack and meal breaks for myself or I won't eat until the end of the day when I try to remember when I last ate. I'm embarrassed to say that I've had fainting spells and episodes of … [Continue]
